Appassimento
Time Enhances Everything
The winery has two areas dedicated to the drying process, “Appassimento”, covering approximately 1,000 square meters. Here, the grapes rest for some months before vinification. The drying of our grapes occurs slowly and evenly, controlled by constant ventilation and low humidity.
This process increases the sugar content, enhances the polyphenols, and enhances the aromas of the grapes. This is how Amarone della Valpolicella gains those unique qualities that are recognized worldwide.
