Tasting notes:
Bright golden yellow with delicate green reflections.
Elegant and fragrant, with grassy notes of freshly cut grass, green almond, and artichoke, enriched by subtle hints of aromatic herbs, citrus nuances, and delicate floral tones.
Balanced and harmonious, with medium fruitiness. On the palate, flavors of green apple, chicory, and almond emerge, accompanied by a fine, pleasant spiciness of black pepper and a delicate, persistent bitterness.
Clear and bright, with excellent density and structure. The finish is clean and persistent, leaving a refreshing sensation.
Age & Varieties:
Centuries-old plants, over 200 years old. Grignano, Favarolo and Leccio.
Harvest:
Carried out by hand-picking (brucatura), respecting the optimal ripening time of the olives.
Extraction:
Cold-pressed within a few hours of harvesting to best preserve freshness and quality.
Production area:
Olive groves located in the upper Val d’Illasi at about 500 meters above sea level, characterized by calcareous soils and the fresh, breezy climate of the Lessini Mountains.
